Mummy thought it might be a nice idea to share some of the recipes that she is using, with you.
So here goes:
Cabbage Surprise
25g/1oz brown rice
75g/3oz cabbage, shredded
1 tomato, skinned, deseeded and chopped
a little margarine or oil
50g/2oz Cheddar cheese, grated
Cook the rice in water until quite soft (about 25 minutes). Steam the cabbage or boil in water until tender. Saute the tomato in a little margarine or oil, add the well-drained cabbage and continue to cook for a further 2 minutes. Stir in the grated cheese and cook over a low heat until all the cheese has melted. Mix the cabbage, tomato and cheese together with the cooked rice and chop it into small pieces.
Multicoloured Casserole
1 tablespoon olive oil
1 shallot, peeled and finely chopped
40g/1/1/2 oz red pepper, diced
100g/4oz frozen peas
100g/4oz frozen sweetcorn
120ml/4fl oz vegetable stock or water
Heat the oil in a saucepan, add the shallot and red pepper and cook for 3 minutes. Add the peas and sweetcorn, pour over the vegetable stock and bring to the boil. Cover and simmer for 3-4 minutes.
Mummy forgot to mention that she put together a yogurt for me too. Here is the directions for that:
Fruity Yoghurt
1 ripe peach stoned, skinned and chopped
1 small banana, peeled and chopped
300ml/10fl oz natural yoghurt
4 teaspoons maple syrup
Simply mix all the ingredients together and serve. Mash the fruit for younger babies.
The top 2 recipes can be frozen but the yoghurt has to be eaten or put in the fridge.
